One of Indonesia's natural resources, jamblang (Syzygium cumini L.) seed, which is a byproduct fruit, contains antioxidants and can be used to make seed coffee. With fully randomized design, the aim this study was evaluate level liking, antioxidant activity, vitamin C in coffee (RAL). Data that has been collected, statistically tested using Duncan's Multiple Range Test (DMRT). The two degrees treatment are roasting seeds for either 10 or 20 minutes, with robusta serving as control. Various times beans result different levels cooked minutes have higher both.
